Chef Ismail showcases signature dishes at Promenade Hotel

KOTA KINABALU: Malaysia’s very own celebrity chef, Dato’ Ismail Ahmad (or affectionately known as Chef Ismail) is in town to showcase his mouthwatering range of signature Malay cuisines.

The affable chef was flown in by Promenade Hotel here which is promoting the buka puasa buffet at its Promenade Café in conjunction with the Ramadan fasting month.

Chef Ismail is well known for his meticulous preparation with emphasis on traditional recipes and the preservation of culinary heritage for the younger generation to appreciate.

A native of Negeri Sembilan, Chef Ismail put up a half-hour cooking demonstration before guest of honour Datuk Yeo Boon Hai, the City Mayor, and came up with Nasi Ulam, one of the 17 dishes created by him for the buffet.

Aside from Chef Ismail’s specialties, Promenade Cafe’s sungkai buffet also offers more than 200 dishes. They include Gulai Lemak Telur Itik, Asam Pedas Ikan, Ayam Kurma, Ayam Percik Kelantan, Bubur Lambuk, Daging Bakar Air Asam Kerisik, Daging Masak Hitam, Kerabu Mangga Rebung, Kerabu Pucuk Paku & Taugeh, Ketupat Sotong, Laksa Asam, Lawar Jantung Pisang, Lemak Cili Padi Daging Salai and Nasi Minyak.

Dishes are served on a rotation basis over the month-long fasting. Regular and popular features include the hotel’s Malay Sous Chef Mohd Firdaus Abdullah whose signature fish head curry, oxtail asam pedas, udang masak petai and the coconut milkshake are much in demand.

According to its General Manager, Hafizan Wong, the hotel is preparing for the arrival of bulan syawal (end of fasting) by offering some specialty dishes to mark the occasion.
